My First Recipe Share 😋

Ok, so I have to start off with a disclaimer 🤣: I am not a chef nor am I a photographer😅

What I can admit too though is that I do make good food that keeps my family happy 😊 . If there’s one thing most people wouldn’t know about me is that I enjoy working in the kitchen, more especially when the dish is savory.

But when I step into the sweet things I usually have my close friend Mercy come in to help me perfect my dishes.. Shes definitely passionate about the sweet stuff. In the past it would be the perfect excuse to pull out a bottle of wine to chit chat over but more recently it is becoming an opportunity to catch up, to reflect and to connect. It’s become harder to find the time to get it done which is why the moment is highly valuable and cherished.

Ohhkay…! Now, the cake we made is a cholesterol free version of a double chocolate cake which was inspired by the amazing Martha Stewart.  As I just had a baby, I’m not looking to indulge too much in the sweet unhealthy stuff but rather healthier foods to help keep my milk supply and quality good so finding somewhat healthy alternatives is exactly what I need right now.

The cake was quick and easy to make and tastes delicious 😋 super moist and chocolatey!! Hope you like it💋💋



 For the cake:

  • vegetable oil cooking spray
  • 1 cup warm water
  • 1/2 cup unsweetened natural cocoa powder
  • 1 1/2 cups cake flour
  • 1 cup granulated sugat(brown)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup olive oil
  • 1 tablespoon pure vanilla extract
  • 2 teaspoons lemon juice 🍋

Preheat the oven to 190 degrees Celsius , coat a round cake pan with the spray.

Whisk water and cocoa in small bowl until smooth. Combine flour, sugar, baking soda and salt in a large bowl, and make a well in the center. Add cocoa mixture, oil and vanilla. Whisk until smooth. Whisk in vinegar and pour it into the pan.

Bake until a toothpick inserted into the center comes out clean, 30-35 minutes. Then let it cool for 20 mins. Run a knife around the edge of the cake. Let the cake cool completely.
For the glaze:

  • 2 slabs dark chocolate
  • 1/2 xylitol
  • 2 tablespoons water

Melt chocolate in a heatproof bowl set over simmering water stirring until smooth and let it cool slightly.

Whisk together xylitol and water until smooth, then add the melted chocolate. Whisk until thickened. Pour glaze onto the center of the cake and spread gently over the top and the sides.

Serving suggestions: I loved having it with some chocolate sauce and a scoop of ice cream 🍦
